Spinach is high in iron—very important for vegetarians. The citrus in this dressing helps your body absorb the iron better. Don't forget: regular Worcestershire sauce has anchovies (small fish) so be sure to buy the vegetarian kind.
Spinach Salad with Hard-Boiled Eggs
Salad Ingredients:
16 ounces of fresh spinach leaves½ of a red onion, thinly sliced
I can of sliced water chestnuts, drained
4 hard boiled eggs, sliced (optional)
Spinach Dressing:
2 tablespoons canola oil2 tablespoons ketchup
2 tablespoons apple cider vinegar
2 tablespoons vegetarian Worcestershire sauce
4 tablespoons orange juice
1 teaspoon of sugar
1 clove garlic, minced
Directions:
1. Place dressing ingredients in a jar or dressing bottle with a tight lid and shake vigorously.2. Lightly toss salad ingredients (except eggs) and dressing together.
3. Top with eggs last so they don’t fall apart.
Vegan Variation: Omit eggs.
