We love pasta with veggies but we sometimes get bored of tomatoes and other obvious choices.
Bowtie Pasta with Caramelized Onions, Roasted Cauliflower and Broccoli
Ingredients1 onion, sliced
1 tablespoon butter
3 tablespoons olive oil, divided
1 tablespoon brown sugar
1/2 large head of cauliflower, cut into flowerettes (approximately 2 cups)
1/2 large head of broccoli, cut into flowerettes (approximately 2 cups)
2 cloves garlic, minced
16 ounces of bowtie pasta, cooked according to package directions (whole wheat pasta works well too)
1/2 cup of asiago cheese
Directions
- Cook pasta according to package directions. Prepare vegetables while pasta is cooking.
- Saute onion in butter and 1 tablespoon of oil until onion is soft. Add brown sugar and cook until golden brown, stirring frequently.
- Toss cauliflower and broccoli with 1 tablespoon of oil and minced garlic to lightly coat. Spread over a cookie sheet and bake at 400 degrees until veggies begin to brown (about ten minutes).
- Toss pasta, caramelized onions, cauliflower, broccoli, remaining tablespoon of oil together. Add salt and pepper to taste. Sprinkle asiago cheese over the pasta and serve.
