Vegetarian School Lunches: Egg Salad

Here's my second post in this series of great vegetarian school lunches based on recipes from the new edition of Veggie Teens Cookbook: A Cookbook and Guide for Teenage Vegetarians.

Egg salad is great for both breakfast and lunch! Try it on bread or salad with your favorite fixings.  

Recipe: Egg Salad 

Makes 2 servings

Ingredients

4 hard boiled eggs
2 tablespoons light mayonnaise
1 teaspoon yellow mustard
1 tablespoon minced onions
1 tablespoon of dill pickles, finely diced
1/8 teaspoon of salt

Directions

1. Finely chop the hard boiled eggs and put in a bowl.
2. Add remaining ingredients and mash together with the back of a fork.
3. Serve on bread or toast with lettuce and tomato or on a salad.

Cinnamon Apple Packets

This recipe is great for BBQs, especially when served over ice cream. Based on a recipe from the new edition of Veggie Teens Cookbook: A Cookbook and Guide for Teenage Vegetarians. 

Recipe: Cinnamon Apple Packets

Makes 4 packets

Ingredients

4 small apples, sliced
1 tablespoon brown sugar
1 teaspoon cinnamon

Directions

1. Pre-heat grill or oven to 400°.

2. Combine the fruit, brown sugar and cinnamon in a small bowl.

3.  

   Tear off four 12”x12” squares of heavy-duty foil and spray with non-stick cooking spray.
4. Divide the fruit mixture evenly between the four foil squares.
5. Fold edges of the foil over or gather and twist foil tightly. 
6. Place on rack and cook for about 20 minutes until apples are tender. 
7. Serve warm or pour over vanilla ice cream.
